Roasted Chicken with Apricot Chutney

I received a large box a dried apricots at work and I had no idea what I was going to do with it!  The apricots were getting a little old and too dry to just eat by themselves so they were going to have soak in something but what would I do with them then?  I didn’t need any desserts so I did a little digging on the web and found that apricots go well with some northern African flavors like cumin and peppers.  I ended up soaking the apricots in warm chicken broth to soften them up and then chopping them in a food processor.  I simmered them with the broth, cumin, garlic, and sauteed red bell peppers.  The chutney was too sweet for a savory dish and I didn’t want to make it spicy so I pureed some black olives and mixed that in.  The olives balanced out the sweetness and it was so tasty!
